Guilt Free Vegan Banana Bread for The Busy Boss Babes
Ever feel like you don’t have time before the work week hits to really get your meals for the day planned out? If the answer to that question is yes, you’re not alone girl! I thrive in the kitchen ladies, and I am here to serve you some easy meal options that will be total life savor for you all. First up, I’m serving up something healthy and sweet for your breakfasts, it’s my guilt free vegan banana bread that only calls for nine ingredients. Yes, you read that right, only NINE ingredients!
Here are the ingredients:
3 mashed ripe bananas
1/3 cup of melted vegan butter
2 tsp of baking powder
1 tsp of baking soda
1 tsp vanilla
1 cup of nondairy milk (I like to use unsweetened almond milk)
1 cup of sugar (I like to use coconut sugar, or you can use monk fruit too)
2 cups of all-purpose flour
1 cup of nondairy/vegan chocolate chips
This is a great grab and go breakfast that only requires twenty minutes to bake in a 350-degree oven, depending on the heat of your oven over the weekend during meal preps for the week ahead. I like to monitor it around fifteen-twenty minutes because every oven can be different. You really want to look out for the top to get a nice golden brown and once it’s done, I like to add a pinch of cinnamon on the top, or you can even add extra chocolate chips to the top to get that nice chocolate taste.
I love this option because it’s really guilt free, fuels you in the morning, and is not too filling. And if you’re a Trader Joe’s lover like me, all of these ingredients can be found. Something I love to do in prepping for the work week ahead is going to Trader Joe’s, looking for items I already know I want to include for my week’s meals, and walking away with so many groceries at such a reasonable price.
